The Letter of Appointment is a Template that is downloaded and completed and then uploaded back into Networx. This is emailed to the candidate but it is not included with the documents that convert to IRIS. We have been told there is no functionality for this at present.

You’re right, at present the system doesn’t automatically transfer documents that are attached to emails. While we don’t currently have immediate plans to add this functionality, documents uploaded directly to offer forms are transferred to IRIS Cascade.
A possible workaround would be to include a step in your offer workflow that prompts the user to upload the Letter of Appointment directly to the form. If uploaded this way, the document will be included in the transfer to IRIS Cascade.
